INGREDIENTS

1/2 C bread, large chunks
1 C tomato, roughly chopped
1 C cucumber, roughly chopped
1/4 C red onion, roughly chopped
1 garlic clove, finely chopped
1/4 C basil, chopped
3 T olive oil
1.5 T red wine vinegar
Salt to taste
Black pepper to taste

METHOD

Toss the ingredients in a bowl.
Toast the bread lightly in a pan with a drop of olive oil.

Lasts up to 2 days in the fridge.
Serves 4.
