INGREDIENTS

½ C almonds
¼ C walnuts
¼C cashews
¾ C goji berries
4T lucuma powder
4 dates, soaked plus the soaking water (approx. ¼ C–just enough to get the mixture moving)
4 T desiccated coconut
2 T coconut oil
1 T maca powder
½ T vanilla powder
Pinch rock salt

METHOD

Grind the almonds in a high speed blender or a coffee grinder. Then place them in a food processor or blender along with all the other ingredients except the coconut oil and dates. Process until the ingredients are well mixed. Then add the coconut oil, dates and soaking water to bind the mixture. Roll the mixture into tiny bite sized pieces. Then roll them in more desiccated coconut. You will need approximately 4 tablespoons for the rolling. Store them in an airtight container on wax paper in the freezer and enjoy as needed. They last up to a month in the freezer.

Makes 32-35 bites of 15 grams each
