INGREDIENTS

½ C cooked quinoa
1 sweet potato, baked and peeled
1 T buckwheat (mixed with 3 T water for an egg replacement)
2 T coriander, chopped
1 small onion, diced
2 cm ginger, peeled
1 clove garlic, minced
½ t rock salt
½ t garam masala
½ t currypowder
¼ t mustard seeds
1/8 t cayenne pepper
2 C spinach
Melted coconut oil for brushing

METHOD

Combine all the ingredients together in a bowl.  Form into patties and bake in the oven.

Makes 4 patties
