INGREDIENTS

½ C cashews, soaked for 1 hour
1 medium pineapple, peeled and chopped
3 T coconut flakes
2T maca powder
1 date
One vanilla pod, scraped
1 C ice
½ t cinnamon powder
¼ C of water to blend

METHOD

Blend until smooth.  Pour over fruit salad or put into your ice cream machine to make ice cream.  Serve chilled. Makes approximately one cup.

Freezes well for up to a month.
